Research Objectives
Compare the actions of soybeans with pulses in relation to blood pressure, arterial stiffness and serum cholesterol levels.
Project Description
Eating ½ cup of mixed pulses per day will reduce two major risk factors associated with cardiovascular disease: blood cholesterol levels and hardening of the arteries. However, it is not known if consuming whole soybeans provides the same benefits; therefore, the effect of soybeans on blood pressure, arterial stiffness and serum cholesterol levels will be evaluated.
